Claudio Castro Marsellesa red honey — Costa Rica

Claudio's farm, Finca Chaparral, is located in San Rafael Desamparados, high above Costa Rica's capital city of San José. The farm has views over the city & the entire Central Valley region. The climate & soil are perfect for growing quality coffee. There is always a danger that the city will take over this productive farm land as San José rapidly expands. To combat this, in 2016, Claudio started redeveloping the farm, planting more productive, disease resistant coffee cultivars that produce better quality coffee like this H10 lot.

This coffee was processed using a semi-washed 'honey' method. After harvesting, the coffee cherries are de-pulped & then dried on raised beds with the sticky mucilage 'cherry flesh' still attached. The beans are in a pile no deeper than 10cm & are turned every 30 minutes. Drying takes 8-10 days. The more mucilage that is left on the bean, the darker the colour as it dries, yellow honey being the least mucilage, black honey the most & red honey somewhere in the middle.

Marsellesa is a cross between Villa Sarchi [for flavour] & Hybrido de Timor [for disease resistance]. It is resistant to coffee leaf rust, highly productive & has great flavour potential at medium altitudes. It was developed by CIRAD in Nicaragua.
