About the farmer(s)
Pedro Garcia Diaz Caturra washed
— Peru
José has a small [3-hectare] farm in Cajamarca, Peru's Northern Highlands high in the Andes. José concentrates on producing high-quality coffee, he grows Caturra & Red Bourbon cultivars.
This lot was processed using the natural method. Coffee cherries, once harvested are sorted for under/over-ripe cherries & foreign material, [leaves, sticks, etc], & then placed on drying beds in a parabolic dryer. They dry over 25-30 days. The cherry flesh is then mechanically removed.

This lot is 100% Caturra- it is a mutation of Bourbon discovered in Brasil in 1937. The plant is a dwarf so it can be planted close together resulting in more production per hectare. Caturra has good flavour characteristics but is susceptible to disease.
