Nazario grew this lot on his small farm El Trapiche. The farm is located in La Union, Nariño. This is in the Southwest of Colombia. The area is mountainous & has 5 volcanoes. These provide the farm with much needed nutrients. Once the coffee is harvested the cherries are floated in tanks to remove any sticks or leaves, then hand-sorted to remove under & over-ripe cherries. They are then fermented under water fo 30 hours before being de-pulped, wased then dried on raised beds on a parabolic dryer.

Bourbon is a natural mutation of Typica originating from La Réunion {until 1848 known as Île Bourbon}. The coffee was planted in 1708 by the French who acquired seeds from the Dutch, who in turn acquired them from Yemen. Colour of the cherries is  due to a recessive gene, they can be either pink, yellow, orange or like this offering, red when ripe. Bourbon is 1/3rd more productive than Typica.
