Finca Terrazas del Pisque is a 38-hectare farm with around 15 hectares planted in coffee, other areas of the farm are used for growing avocados and citrus. Arnaud developed the farm from scratch in an arid desert zone. Located in Ecuador's Pichincha region, harvest happens nearly year-round. During horvest, only the ripest cherries are selected for processing. Once picked, the coffee cherries are de-pulped, fermented for 36 hours, washed, and dried on raised beds for an average of 12 days.

Java is an Ethiopian Landrace cultivar. Taken from Ethiopia to Java by the Dutch in the early 1800’s. From Java it was taken to Cameroon in the mid 1900’s. In 1991 it was taken to Costa Rica & from there it has been released in Central & South America. It has great flavour characteristics & disease resistance.
