Roxana Chambi - Red Catuai [washed] — Bolivia

Roxana first planted coffee at her 5-hectare farm San Lorenzo in 2019. The farm is located in Caravani, La Paz, in the Andes Range. This lot was processed using the washed method. Once harvested, coffee cherries are washed, sorted, de-pulped, fermented, washed & then spread out to dry on raised beds for 15-20 days. This method produces clean fruit flavours with good acidity.

Catuai is a cross between Mundo Novo & Caturra. It was developed in Brasil & released in 1972. The plant is a dwarf, highly productive with good cup quality.

Brew guide

This is a light espresso roast. Roasted to bring out the fruity flavours of the coffee. This style of roast is best suited for black espresso based drinks. That said, you can still make a tasty flat white out of this roast.
