JAIRO ARCILA Castillo [ice natural] filter roast

Jairo always has some new experiment up his sleeve, this one’s his ice natural. It’s not your usual brew, its dense & syrupy, very sweet & funky with flavours of super-ripe pineapple & mandarin. It's a coffee to drink over weeks rather than drinking it all the first week.

      Jairo Arcila Castillo ice natural — Colombia

      This coffee was grown by Jairo at his farm, Finca Villarazo. The cherries from these Castillo shrubs were hand-picked at optimum ripeness, then transported on the same day to "La Pradera" [a mill owned by Jairo's sons Carlos & Felipe] for processing. In this case, the coffee was processed using the experimental, "ice natural" process. The coffee was anaerobically fermented for 24 hours & then placed inside GrainPro bags for 50 hours at temperatures below 22 degrees, then frozen for 72 hours. After this fermentation process, the frozen coffee is placed on raised beds at temperatures below 35 degrees until the ideal moisture content is achieved.

      This lot is 100% Castillo developed by CENICAFE [the Colombian coffee research facility] & released in 2005. It was bred from Caturra & Hybrido de Timor. It is highly resistant to disease & is now the most planted cultivar in Colombia.
