Another gem from Jairo, this Tabi certainly has a funky aroma you'll probably notice before even ripping open the bag, but once brewed it's sugar sweet, ripe strawberry, ripe cherry & a touch of candied orange.

This coffee was grown by Jairo at his farm Santa Monica. The cherries from these Tabi shrubs were hand-picked at optimum ripeness, then transported on the same day to "La Pradera" [a mill owned by Jairo's son Carlos] for processing. The coffee cherries were floated and hand-sorted to remove defects & then dried on raised "African" beds in temperature- controlled conditions until the moisture was reduced to around 11%.

This lot is 100% Tabi - developed by CENICAFE, the Colombian coffee research facility & released in 2002. It is a cross between Hybrido de Timor, Bourbon & Typica, bred for disease resistance high cup quality. Tabi means good in Guambiano, an indigenous language.
