John is a third-generation coffee farmer. His family has worked this land for many years. John has been running the 10-hectare farm, Las Brisas for 15 years. He uses both traditional & modern production techniques & enjoys experimenting with new cultivars & processes. This coffee was processed using the natural method. After harvesting coffee cherries were floated to remove under/over-ripe cherries, sticks, leaves etc, wet fermented for 130 hours in large barrels, dry fermented for 15 hours then spread out to dry in a parabolic dryer until the moisture content reduced to 11%. The dried flesh was then mechanically removed.

Pacamara is a coffee cultivar developed in 1958 by El Salvador's ISIC by crossing Pacas [a Bourbon mutation] and Maragogipe [a Typica mutation]. The idea was to cross the dwarf size & high production of Pacas with the higher cup quality of Maragogipe.
