About the farmer(s)
John Wilmer Cuellar - SL28 [natural]
— Colombia
John is a third-generation coffee farmer. His family has worked this land for many years. John has been running the 10-hectare farm, Las Brisas for 15 years. He uses both traditional & modern production techniques & enjoys experimenting with new cultivars & processes. This coffee was processed using the natural method. After harvesting coffee cherries were floated to remove under/over-ripe cherries, sticks, leaves etc, dry fermented for 24 hours , wet fermented in large barrels for 80 hours then spread out to dry in a parabolic dryer until the moisture content reduced to 11%. The dried flesh was then mechanically removed.
