Jorge Osorio - V. Colombia [natural] — Colombia

Jorge grew this lot on his farm El Paraiso. The cherries were harvested at optimum ripeness then taken to the mill where they were sorted to remove defects, floated in tanks to remove under & over-ripe cherries & then dry fermented for 45 hours. The cherries are then placed in a thin layer on raised beds in a parabolic dryer for around 10 - 15 days.

V. Colombia was bred by CENICAFE [Colombia's national coffee research centre] from Caturra & Catimor & released in 1982 it is highly resistant to disease & has good productivity.

Brew guide

This is a light espresso roast. Roasted to bring out the fruity flavours of the coffee. This style of roast is best suited for black espresso based drinks. That said, you can still make a tasty flat white out of this roast.
