About the farmer(s)
Jorge Osorio - Tabi [anaerobic washed]
— Colombia
Jorge grew this lot on his farm El Paraiso. The cherries were harvested at optimum ripeness then taken to the mill where they were sorted to remove defects, floated in tanks to remove under & over-ripe cherries & then fermented underwater for 30 hours. [This allows the cherry to breakdown in a controlled manner increasing complexity & sweetness]. The cherries are then de-pulped, washed & placed in a thin layer on raised beds in a parabolic dryer for around ten days.
