About the farmer(s)
Luis Anibal Calderon [Castillo] washed
— Colombia
Luis Aníbal comes from a long line of coffee producers. His family has been growing coffee for over 60 years. Luis himself has been growing coffee for over 30 years. Luis was only 12 when his father gave him a small plot of land to produce coffee.
During harvest, coffee is hand-picked, selecting only perfectly ripe cherries. The coffee is then processed using the washed method. Coffee cherries were wet fermented for 30 hours, de-pulped, washed, & then spread out to dry on raised beds in a parabolic dryer until the moisture content reached 10.5%.
