Santa Isabel was first planted by Luis' great-grandfather in 1875. It was then sold in 1890, but the Valdes family brought it back in1961. The farm is now run by the 4th & 5th generations of the Valdes family.
There are 40 full-time employees. Up to 500 seasonal workers are employed during harvest. The farm is 187 hectares in size. 100 hectares are set aside as a natural forest.
Coffee is hand-picked & then de-pulped in an eco-pulper. The water used in processing is treated & recycled on the farm. All coffee waste is composted & used as fertiliser.
This lot is a mix of 4 cultivars. Caturra - a mutation of Bourbon discovered in Brasil in 1937. It is a compact plant & very productive but susceptible to disease. Sarchimor is a hybrid of Villa Sarchi & Hybrido de Timor developed in El Salvador & Honduras. Pache - a mutation of Bourbon discovered in Guatemala. Catuai - a hybrid of Mundo Novo & Yellow Caturra developed in Brasil in 1949.
