Monica is 47 years old & runs finca El Resplandor with the help of her two sons Jairo & Ivan. This lot was harvested & hand-sorted by Monica & the boys.
The cherries were selectively hand-picked then placed in water tanks to ferment for 45 hours. The cherries were then de-pulped, washed & finally dried on raised beds for 20 days.
Monica is also a school teacher so Jairo & Ivan take care of the farm following her instructions.
This lot is 100% Caturra - it is a mutation of Bourbon discovered in Brasil in 1937. The plant is a dwarf so it can be planted close together resulting in more production per hectare. Caturra has good flavour characteristics but is susceptible to disease.
