NYAGISHIRU - filter roast

This lot was processed at the Nyagishiru Coffee Washing Station. The station has its own farm growing around 7000 trees. Coffee cherries are also purchased from 844 farmers in the surrounding area. Due to the distance there are collection points in the 12 surrounding hills.
Both farmers & seasonal workers are paid over the market rate. Nyagishiru also distributes composted coffee pulp & seedlings back to the farmers. Nyagishiru have also donated money fro the construction of a school & health care centre for the area.
This lot is fully washed, after harvest the coffee cherries are delivered to the washing station or collection point, then they are sorted for any under or over-ripe cherries, de-pulped, wet-fermented, washed, soaked in clean water & finally dried on raised beds for 25 days.
Nyagishiru is 100% Bourbon a natural mutation of Typica originating from what was called Île Bourbon. The colour of the cherries can be either yellow, pink, orange or in this case red when ripe.
