This is the first Aji cultivar we’ve offered & it’s a doozy. It’s very sweet, clean & juicy with flavours of ripe blueberry, apple syrup & gold kiwifruit.

      Paola y Carlos Trujillo - Aji [washed] — Colombia

      Paola & Carlos Trujillo are dedicated coffee growers. Paola, Carlos & their family own Patio Bonito, an 11-hectare farm, located in Caldono, Cauca. They are well-known in the area for growing high-quality coffee. There is a large variety of cultivars grown on the farm, Castillo, V. Colombia, Pink Bourbon, Pacamara, Geisha, Sidra, Java, SL28, Wush Wush, Typica, Laurina & this Aji lot. Paola studied chemical engineering, & after her studies, she realised she wanted to join Carlos & support the family, producing coffee. This Aji was processed by the washed method, the ripest cherries were selected for processing, floated to remove defects, hand-sorted, fermented under-water for 30 hours, de-pulped, washed & then placed on raised beds in a covered area to dry for 14 days.

      Aji was discovered in Huila, Colombia. Originally thought to be a mutation of Bourbon is was DNA tested & found to be an Ethiopian Heirloom. Named Aji after the Spanish word for chili pepper, not for being spicy, but for the aroma when the coffee is de-pulped.
