      Paola y Carlos Trujillo - Java [washed] — Colombia

      Paola & Carlos Trujillo are dedicated coffee growers. Paola, Carlos & their family own Patio Bonito, an 11-hectare farm, located in Caldono, Cauca. They are well-known in the area for growing high-quality coffee. There is a large variety of cultivars grown on the farm, Castillo, V. Colombia, Pink Bourbon, Pacamara, Geisha, Aji, Sidra, SL28, Wush Wush, Typica, Laurina & this Java lot. Paola studied chemical engineering, & after her studies, she realised she wanted to join Carlos & support the family, producing coffee. This Java was processed by the washed method, the ripest cherries were selected for processing, floated to remove defects, hand-sorted, fermented under-water for 30 hours, de-pulped, washed & then placed on raised beds in a covered area to dry for 14 days.

      Java is an Ethiopian Landrace cultivar. Taken from Ethiopia to Java by the Dutch in the early 1800’s. From Java it was taken to Cameroon in the mid 1900’s. In 1991 it was taken to Costa Rica & from there it has been released in Central & South America. It has great flavour characteristics & disease resistance.
