      This lot was grown by small-holder farmers in the village of Pluma Hidalgo, located in Sierra Madre del Sur, Oaxaca. The village is high in the mountains surrounded by rain-forest. Coffee is the main crop here, most villagers have some trees growing on their property. This lot was processed by the washed process, on the same day the cherries are harvested, they're sorted for over/under-ripe cherries, de-pulped dry fermented, washed & then spread out to dry on raised beds.
