    Ricardo grew this lot on his farm El Suspiro. The cherries were harvested at optimum ripeness then taken to the mill where they were sorted to remove defects, floated in tanks to remove under & over-ripe cherries & then fermented underwater for 30 hours. [This allows the cherry to breakdown in a controlled manner increasing complexity & sweetness]. The cherries are then de-pulped, washed & placed in a thin layer on raised beds in a parabolic dryer for around ten days.

    This lot is 100% Caturra, a mutation of Bourbon discovered in Brasil in 1937. The plant is a dwarf so it can be planted close together resulting in more production per hectare. Caturra has good flavour characteristics but is susceptible to disease.
