El Diviso is a small family-run farm in La Union, Nariño. Ruby, her husband Alberto & 2 daughters, Yeli & Catherine all work on the farm. They take care of fieldwork, harvesting & processing. They are hard-working & proud of their results. This Variedad Colombia lot was selectively hand-picked at optimal ripeness, floated to remove defects, de-pulped, wet fermented for 30 hours & finally dried in a parabolic drier for around 10 days.

V. Colombia was bred by CENICAFE [Colombia's national coffee research centre] from Caturra & Catimor & released in 1982 it is highly resistant to disease & has good productivity.

Brew guide

This is a light espresso roast. Roasted to bring out the fruity flavours of the coffee. This style of roast is best suited for black espresso based drinks. That said, you can still make a tasty flat white out of this roast.
