Sebastian Gomez - Castillo [washed] — Colombia

Sebastian had been living in Bogota for 8 years before returning home to take over the management of his father's coffee farm.
His father had been growing commodity coffee, but Sebastian convinced him to plant coffees that receive a better income, like Geisha, Pink Bourbon & this Castillo lot.
Sebastian & his wife now take care of all the farm & administration work.
After harvesting, the coffee cherries were floated & hand-sorted to remove defects. The cherries were de-pulped, fermented under water for 30 hours, washed & then sun-dried on raised beds at temperatures not exceeding 35℃.

This lot is 100% Castillo developed by CENICAFE [the Colombian coffee research facility] & released in 2005. It was bred from Caturra & Hybrido de Timor. It is highly resistant to disease & is now the most planted cultivar in Colombia.

Brew guide

This is a light espresso roast. Roasted to bring out the fruity flavours of the coffee. This style of roast is best suited for black espresso based drinks. That said, you can still make a tasty flat white out of this roast.
